This is a compilation of recipes I have created over many years of home cooking. They are unique in many ways because I don't know anyone who cooks anywhere like me! The proverb,"necessity is the mother of invention," is an adage I attribute to my "special" methods! Having a family to make meals for, is a "necessity" which motivated me! These are meatless meals which the, 2015-2020 Dietary Guidelines for Americans, recommends incorporating more of in our meal planning. I use the "guidelines" as a foundation of current scientific information to make meal plans with. Using meat alternative products which are easily kept on the shelf or the freezer, making convenience a byword and clean-up a breeze! I have, traditional recipes, like, chili, meatloaf, stuffed bell peppers, burgers and fries, vegetable soup, Thanksgiving stuffing, but they are meatless and taste better, I think. The preparation time is cut at least in half and most unique is the simplicity of the ingredients which I have found is the most tantalizing to the palate and the most satisfying! Time is the crunch which has us eating out and not benefiting from the better quality food which we can shop for and bring home. With preparation times condensed and left overs available the next day we are time efficiency managers! This is the magic of managing our food choices to make magic meals!
